Rice Noodle Salad Rolls

Ingredients :

    lettuce, any kind will do, iceberg is good and crunchy
    one (just one) long green onion
    cucumber
    grated carrots
    thin rice noodles
    rice paper
    salt, to taste

    pepper, to taste
    peanut sauce Vietnamese hot chili sauce

Directions:

1. Chop up all veggies into long strips-except the onion just wash that. Pretty much any veggie you want to incorporate will be good.

2. Boil water and add the rice noodles. Cook for about 5 minutes, or until noodles are tender - this wont take long. Remove from the pot and put in a dish.

3. Dip a sheet of rice paper into the boiling water- just a few seconds will do.

4. Lay the paper on a surface, put the rice noodles on top as well as the veggies, and season with salt and pepper. Roll in a burrito like fashion. The paper rip's easily if this happens just boil another piece of paper and wrap it around the roll again.

5. Use peanut sauce for dipping

Source of recipe: This is a Vietnamese recipe that is popular at markets etc, food fairs. I started making them a few years ago. soooo good
